Maria's Mushroom Pierogis

Black trumpet mushrooms, red fingerling potatoes encased in a gluten-free dough, tossed with caramelized onions, and Vidya's oven dried tomatoes.

This dish, like all of our food, is 100% gluten-free. That isn't easy to achieve when making a pierogi, as gluten is quite glu-ey, and helps to hold things together through all the pressing, boiling, and frying. We tried mightily to achieve this while keeping it vegan, but after weeks of failed experiments, we discovered that by using pastured organic eggs, the lil dumplings held form quite nicely.
